It is definitely spring. Beautiful temperate sun-shiny bunny-popping spring.
There are two ways I know this for certain:
(1) The Canada geese that make their nest somewhere near work have arrived again at their lookout. They’re there almost every morning, standing sentinel.
(2) The elves have become mischievous, cavorting through our kitchen while we sleep, setting up little pranks for us to find in the morning.


It is so nice to see the geese. makes me think of:>>Heat oven to 350 degrees F. Place goose on rack in roasting pan.>With fork, prick goose skin, taking care not to pierce meat; stuff cavity with lemon and garlic. Sprinkle with salt and pepper; tie legs with kitchen twine. Roast 2 ½ hours or until thermometer inserted in thickest part of thigh registers 170 degrees F. Cover with foil if browning too quickly; periodically skim fat from pan. >>Transfer goose to serving platter; cover with foil and let stand at least 15 minutes before carving. >>Meanwhile, pour pan drippings into measuring cup; let stand 5 minutes or until fat separates. Return 2 Tbs. fat to roasting pan; skim and discard remaining fat. Place pan over two burners set at medium heat. Stir in pan drippings and remaining ingredients; bring to a boil, scraping up any browned bits. Boil 10 minutes or until slightly thickened. Serve with goose.
Oh my gosh. I was writing on and on, engrossed in my goose story, a real cliffhanger story by-the-way, but then remembered I already blogged it here. What was I thinking???>>But for those drawing a blank, the goose story is the sad but true tale of the obnoxious & too friendly goose that waddled up to my clever, brave and hungry grad committee member, Lynn, while she was home at Christmas time. To just hit the high point here, a local, wayyyyyyy too friendly goose meets a swift, but painless death (I think it was painless…the story is much better if I go the painless route) at the hands of said grad committee member….so, Lynn kills the bird bare handed, everyone eats goose for Christmas dinner & that’s it folks, the sad, but true dead goose story…bah hum bug. >>Be glad to share more geese details for any interested parties but realy, any more than this would be, …hum….boring.
